Anne's kitchen has kind of been out of commision the last few weeks. Actually I just haven't cooked anything new, but this week I went back to the cookbooks (actually magazines) and found two great recipes. My family enjoyed both!
Baked Ziti
from Taste of Home Oct/Nov '04
12 ounces uncooked ziti or small tube pasta
2 lbs ground beef
1 jar (28 oz) spaghetti sauce
2 eggs
1 carton (15 oz) ricotta cheese
2 1/2 C shredded mozzarella cheese, divided
1/2 C grated Parmesan cheese
Cook pasta according to package directions. Meanwhile, in a skillet, cook beef over medium heat until no longer pink; drain. Stir in spaghetti sauce. In a large bowl, combing the eggs, ricotta cheese, 1 1/2 C mozzarella cheese and Parmesan cheese.
Drain pasta; add to cheese mixture and toss to coat. Spoon a third of the meat sauce into a greased 13 x 9 x 2 in baking dish; top with half of the pasta mixture. Repeat layers. Top with remaining meat sauce.
Cover and bake at 350 for 40 minutes. Uncover; sprinkle with remaining mozzarella cheese. Back 5 - 10 minutes longer or until the cheese is melted. Let stand for 15 minutes before serving.
Serves 6 - 8
Chicken Can-Can
from Quick Cooking collector's edition
1 can (12 oz) evaporated milk
1 can (10 3/4 oz) condensed cream of celery soup, undiluted
1 can (10 3/4 oz) condensed cream of chicken soup, undiluted
1 can (1o 3/4 oz) condensed chicken noodle soup, undiluted
1/4 C all purpose flour
1 can (10 oz) chunk white chicken, drained
1 can (5 oz) chow mein noodles
In a large skillet, combine the first fice ingredients. Bring to a boil. Cook and stir for 2 minutes or until thickened. Add the chicken; heat through. Serve over chow mein noodles.
Serves 5
*** I serve this over rice. I've done it both ways and the rice is much better. It just tastes like chicken and rice. I hadn't made this for a LONG time and Kristin loved it tonight!***
